Chicken-curry potatoe casserole

You can prepare this casserole with chicken legs or wings, sweet potatoes, onions and tomatoes in 10 minutes in an oven dish and your oven does all the work. After 40 minutes, turn the chicken over and cover it again with foil. When you come downstairs, there is a wonderful smell in the kitchen. Cooking in the oven is like fooling everyone, because the oven does all the work and you don't have to worry about getting tough or bone-in meat deliciously tender...

Plan

  • 2 tbs curry rub
    400 g chicken legs or wings, fish or veggies
  • 3 tbsp oil
  • 150 g tomato or 200 ml coconut milk
  • Salt and pepper to taste

Prep

  • Cut the chicken legs or wings in 2 pieces, meat, fish or veggies into pieces
  • Cut onion, patatoes and tomato in cubes
  • Place the legs in the casserole
  • Add the oil, onion, tomato, salt, curry paste and potatoes and mix everything well
  • Close the oven dish with alu foil and cook the dish at 200 degrees for 80 minutes and longer if necessary!
  • Organic chicken takes longer to cook. Score the leg near a bone and see if the meat comes away easily from the bones.
  • Don't forget to turn the chicken and potatoes half way through!
  • Taste the dish and see if there is enough salt and pepper!of er genoeg zout en peper in zit!

     

     

Pleasure

  • Remove the foil from the dish and grill the dish for 2 x 5 minutes on both sides at 200 degrees!
  • Warm the rotie or nan!
  • Mix some cucumber pieces with chutney and serve!

Curry cabbage is a very simple and delicious dish with the chicken casserole.
  • Finely chop the cabbage and mix it into the oven dish while grilling.
  • Of course you can also stir-fry the cabbage separately with some curry rub.
  • If you want to make the oven dish larger for more people, white mushrooms cut in half are also delicious in the oven dish or, at the end, frozen peas!
