Vegan Vegetable Curry

Did you know that this vegetable curry is made in 15 minutes, and that it's so delicious that even carnivores won't miss the meat? Make the dish below with our curry rub, only add tomatoes and onions. Amazing comfort food that warms you, makes you happy and is sooo easy....


  • 2 tablespoon kerrierub (tbsp) = 20 g
  • 3 tbsp oil
  • 1 medium sized onion
  • 100 g tomato
  • Salt and pepper to taste
  • 400 g vegetables of your choice such as 200 grams of cooked parsnips, (sweet) potato or a mix and 200 grams of leafy vegetables such as cabbage, spinach, endive or kale.


  • Cut the vegetables , onion and tomatoes medium finely.
  • Dice the parsnips, (sweet) potato.


  • Heat oil in pan with onion and 2 eL kerrierub
  • Stir-fry for 2 minutes and add diced tomato and close pan until tomato is soft
  • Add all remaining vegetables
  • Stir-fry for 3 minutes over medium-high heat.
  • Season with salt and pepper


  • If you do not have cooked (sweet) potato or parsnips cut them into cubes and add to the tomatoes. Close the lid to cook.
  • Kale is quite tough and pre-cook as well!
  • Also delicious with pieces of green beans or frozen peas 'and boiled eggs
  • Stir frozen leaf spinach or cooked lentils into the dish

Serving tip

  • Delicious with rotie , nan or rice or in a wrap
  • Serve with a chutney!
