Whole fish in curry

I can't believe I can rub a whole fish with just the curry rub, put in a baking tray with some tomatoes and not have to do anything else to it. The perfect solution if, like me, you love fish and want to enjoy a festive dish at the end of a busy day without any fuss.

Plan

  • 2 tbsp = 20 g curry rub from Sorgh & Hoop
  • A 4-500 gram of fish of your choice: bream, sea bass, trout. Or pieces from a larger fish like salmon, cod or hake.
  • 2 tomatoes or 200 ml coconut milk.
  • 2 tbsp oil
  • 1 small onion

Prep

  • Finely chop tomato and onion.
  • Make sure the fish has no scales and wash well inside and out, possibly with vinegar.
  • Sprinkle the fish inside and out with the currierub. Rub it in nicely.
  • Place in a baking tray with onion and tomato or coconut milk.

Pleasure

  • Heat the oven to 200 degrees celsius.
  • Put the baking dish in the oven for 15 minutes.
  • Turn the fish over and cook for another 15 minutes.
  • Season with pepper to taste.

Psstt

  • Roast some eggplant slices and possibly shrimp with the fish in the oven.
  • Delicious with naan, rotie (-wrap), or rice
