Creole Stir-Fried Vegetables
In the recipe below, I use a ready made Mexican vegetable mix, but you can use any mix you like. Or make your own vegetable mix using bell pepper, green beans, (frozen) peas, or even mushrooms, zucchini and kidney beans.

For inspiration to make your own fast and easy authentic Creole dishes with vegetables, poultry, meat, fish or shrimp.
Recipe for 4 persons, not spicy.
This base preparation only takes 15 minutes,
 
                    Put some oil in a pan with some chopped onion. Optionally add some garlic. Fry until the onions are translucent.
 
                    Add the spice paste. Let it fry at high heat for a short moment. That way you release all the flavors.
 
                    Add your produce. This could be meat, vegetables, poultry or fish. The finer it is chopped, the faster it will cook.
 
                    If you like some sauce, add two tomatoes. Leave to simmer for about 10 minutes until they are fully dissolved.

This dish with the Creole Spice Paste is great for lunch or dinner. Make this quick Creole stir-fry of strips of meat with this fresh salad and Creole barbecue sauce and let everyone fill their own wrap or pita bread.
My husband is hooked on barbecue and can spend all day doing this. His spare ribs with Sorgh & Hoop's Creole spice paste are a real crowd pleaser. The "low & slow" Cowboy barbecue means the classic 3-2-1 method: 3 hours of smoking, 2 hours of steaming and then another 1 hour of slow grilling. So it takes him about 5-6 hours to do this, but it is really worth it. You do need a good somewhat larger kettle or kamado barbecue for this, and a good temperature gauge.
Have this Creole mackerel with cassava, baked sweet potato or oven fries. The dinner party can begin. Serve with a fresh red onion pickle or a boiled egg if desired!
This meal is a real crowd pleaser that only takes 10 minutes to prepare. The vegetarian version is the same, just change the chicken for firm mushrooms.
